Seasoned Black Beans with Cilantro Lime Rice

To continue my Mexican food obsession/addiction, I made the most amazing Seasoned Black Beans with Cilantro Lime Rice for dinner! Not surprisingly, I served with Pico and Guac. I L-O-V-E this recipe and the intense, delicious flavors!

Since I've been sharing so many Mexican-inspired recipes, I will also share a few pictures from our wonderful vacation to Riviera Maya for my best friend's wedding. We had the most amazing time!


Seasoned Black Beans with Cilantro Lime Rice
Ingredients:
·1 cup brown rice
·Handful of fresh cilantro, chopped
·A few squeezes of bottled lime juice
·1 TBS EVOO
·2 cloves garlic, minced
·1 tsp cumin
·½ tsp cayenne pepper
·½ tsp onion powder
·1 can black beans, drained and rinsed
·Salt and pepper

Directions:
Prepare rice according to package directions. When rice is done cooking, stir in cilantro and lime juice.

Heat EVOO in a saucepan over medium heat. Add garlic, cumin, cayenne, and onion powder. Sauté for a minute, then add black beans. Season with salt and pepper, and cook until beans are heated. Serve over rice.

Believe it or not, I've never, ever had black beans. I bought some recently though and I think I should try your recipe. And your other Mexcian recipes too. They all look so simple and so tasty, my favorite combination!

Joanna - you are definitely missing out on black beans! Not only are there delicious Mexican recipes to make with them, but I've made a few very delicious dessert recipes with black beans (yes, dessert)! Let me know how this recipe turns out for you.
