This is a delicious combination of two of my favorites - GF Calzones and Spinach Artichoke Dip!
I am in love with my Gluten-Free Calzone Dough Recipe. I make it quite often for a variety of pizza or calzone recipes. The dough is crisp on the outside and soft in the inside. It even rises a bit while cooking, which results in a fluffly and moist crust. The calzone crust is very flavorful with the spices and has a touch of added sweetness from the applesauce. Combining it with my all-time favorite Spinach Artichoke Dip was simply brilliant!
Spinach Artichoke Calzones
Ingredients:
·1 Gluten-Free Calzone Dough Recipe
·¾ cup ricotta cheese or cottage cheese
·½ - 10oz. container chopped spinach, thawed and drained
·A handful of jarred artichoke hearts, drained and chopped
·½ cup shredded cheese - pizza or Italian blend
·1 tsp minced garlic
·Dash of nutmeg
·A few cracks of fresh black pepper
Directions:
Preheat oven and pizza stone to 425˚. Prepare Gluten-Free Calzone Dough according to the recipe. In a small bowl, combine remaining filling ingredients from ricotta cheese to black pepper.
Carefully remove the hot pizza stone from the oven and sprinkle the pizza stone with cornmeal. Roll the dough out, using greased parchment paper as a barrier between the calzone dough and the rolling pin. Spoon the spinach artichoke filling onto half of the rolled out Gluten-Free Calzone Dough, then fold the other half of the calzone dough over the topping to create a calzone. Very, very carefully transfer the prepared calzone to the hot pizza stone. Please note, it's easier to make a few smaller calzones than one large calzone.
Bake for 15 minutes, or until crust is golden brown.
