Flourless Fudge Cookies

The dough is hard to work with, but well worth it! There shouldn't be any need to add more liquid, just keep stirring and eventually it will become dough. The dough should be dark in color and moist. Don't try using your hands (like I did) to mix together the dough! I had hands covered in sticky dough and needed my hubby to clean them off! :) The cookies turned out pretty well - very fudgy and rich. I think they would be good with mint chocolate chips or nuts folded in!

·2 ¼ cups powdered sugar
·¼ tsp salt
·1 cup cocoa powder
·2 egg whites
·2 tsp cold water
·2 tsp vanilla extract

Preheat oven to 350˚. Lightly grease two baking sheets. Mix together all ingredients until smooth and well-blended. (The dough is sticky and may be easier to mix with a greased spoon or in a stand mixer). Use a greased spoon to place cookie dough onto baking sheet in 1 inch balls.

Bake for 10-12 minutes. The cookies should spread out with slightly cracking tops. Remove cookies from oven and let them cool on cookie sheet. Makes 16-24 cookies.

  2. The dough may be sticky, but those are some great looking cookies in the end.
