The cheeseburger filling that is
stuffed into the zucchini boat is delicious! It tastes like a cheesy,
deconstructed cheeseburger without all of the grease. Once it’s poured into the
zucchini boat and roasted, the outcome is amazing! I love this new way to enjoy
zucchini, which is abundant in summertime.
If you have extra filling, as we did
– which I highly recommend you find a way to have extra filling, scoop it up
with tortilla chips while the zucchini boats cook. It’s a great appetizer as
you’re waiting for lunch/dinner.
The only changes I made to this
recipe were to omit the pickle (we didn’t have any in the fridge) and
substituted a combination of cheddar and mozzarella cheeses for Gouda (again, we didn’t’
have any in the fridge).
